I am grateful for these!

I practice gratitude daily. I believe in the practice so much that I made it an essential part of my Signature 30 Days to Wellness Program (found on the Courses page!). Yesterday I decided to experiment with cashew cream and made a to-die-for “frosting” for these mini GLUTEN FREE carrot cakes. I was so thankful for how they turned out and that my friends loved eating them as much as I loved making them. I actually danced while I hand grated the carrots. I replaced the pineapple with a quick applesauce made from cooking a few apples, adding cinnamon and then blending; it only took a few minutes!

I used this adorable silicone pan which made each mini cake perfectly consistent. Popping them out of this Perfect Petites pan is half the fun! Remember, let your cakes cool completely before removing, and they’ll pop right out.

I am not a recipe kind gal but every now and then a base is a good place to start; I play from there! This is my version of raw cashew buttercream.

VEGAN CASHEW COCONUT CINNAMON “buttercream”

To frost these beauties I made a vegan raw cashew, coconut, cinnamon “buttercream” using the following ingredients. I blended them all together, placed the delicious cream in a container, and chilled it in the fridge prior to frosting the cakes:

  • 1 cup soaked organic cashew - soaked in water overnight, rinsed and then added to your blender

  • 1/2 cup organic cashew milk - recipe said coconut milk but this was what I had and it worked perfectly

  • 1/4 cup melted organic coconut oil

  • A shaky shake of Apple Pie Spice or Cinnamon

  • 1-2 tbsp. honey. The recipe said maple syrup but again, I used what I had and it was perfect. Maple syrup would be delightful as well! I use local honey because we are so blessed to have an abundance here on the island but whatever unpasteurized honey you have is perfect.
